Hi Vikki, I do baby hands and feet too, am based in Hertfordshire. I recommend 3 - 6 weeks as being the perfect age as they don't notice and usually sleep throughout. I don't like doing them once they get to 5 months or older as they're quite strong and very nosey. The youngest I have done is 5 days and he was early so was very tiny. Not sure I'd want to do one that young again! Younger than three weeks is great for feet - not so good for hands as they have their fists firmly clenched and up around their ears ....

I use a fast setting alginate at a really warm temperature so sets really quickly.

Air bubbles are a pain, always have been. The thicker you can make your plaster the better - and I always take 2 or 3 hand moulds. You can get away with one foot as you can see what's going on inside that mould!
